🍞 Ingredients (Serves 4)
For the Salad:
- 1 large head romaine lettuce, chopped
- 1/2 cup shaved Parmesan
- 1 cup homemade croutons (see below)
- Fresh cracked black pepper
For the Dressing:
- 1 egg yolk (or 1 tbsp mayo for shortcut)
- 1 garlic clove, finely minced
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp fresh lemon juice
- 1/3 cup extra virgin olive oil
- 1/4 cup grated Parmesan
- Salt to taste
For the Croutons:
- 2 cups cubed sourdough or baguette
- 2 tbsp olive oil
- Pinch of sea salt
🔪 Instructions
- Croutons: Toss bread cubes with olive oil and salt. Bake at 375°F for 10–12 minutes until golden and crisp.
- Dressing: Whisk egg yolk, garlic, mustard, Worcestershire, and lemon juice. Slowly stream in olive oil while whisking. Stir in grated Parmesan. Adjust salt.
- Assembly: Toss romaine with dressing, half the croutons, and half the shaved Parmesan. Plate and top with remaining croutons, cheese, and cracked pepper.
