🍰 New York Cheesecake (Diner Style)

Ingredients

Crust:

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp melted butter

Filling:

  • 4 (8 oz) blocks cream cheese, room temp
  • 1½ cups sugar
  • ¾ cup whole milk
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • 1 tbsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. Mix crust ingredients and press into pan. Bake 10 minutes. Cool.
  3. Beat cream cheese and sugar until smooth. Add milk, then eggs one at a time. Stir in sour cream, flour, and vanilla.
  4. Pour into crust. Wrap pan in foil and place in a water bath.
  5. Bake 1 hour. Turn off oven and let sit inside (door closed) for 5–6 hours.
  6. Chill overnight before slicing.

Notes

  • Use room temp ingredients for a smooth batter.
  • Water bath helps prevent cracks.
  • Serve plain or with cherry topping, strawberry sauce, or whipped cream.
